冰肉,是用烧酒和白糖精制过的肥猪肉。将肥肉用大量白糖与适量烧酒拌匀,腌制数天即成。腌制之后的肥肉雪白如冰,莹润透明,故称“冰肉”。冰肉入口清甜爽口,甜肥不腻。腌好的糖肉膘无需再加工,取出拌匀即可直接入馅使用,是传统五仁月饼馅料必加的,可使饼馅滋润甘香,别具风味。

Steps to make 冰肉

  • 1.买一块肥肉厚的,去掉猪皮和瘦肉,选取紧实的部分。
  • 2.肉切片,切条再切丁,大概和黄豆粒差不多大。
  • 3.放水中煮熟。
  • 4.捞出沥干水分,晾凉。
  • 5.加入10g高度白酒拌匀15分钟。
  • 6.加入白糖搅拌均匀,密封腌制。
  • 7.等糖融化,肉丁变透明,和糖一样的颜色就可以用了。
