Steps to make Braised Pork Chop with Smoothed Egg and Onion Sauce
- 1. Clean the pork chop and remove the bones.
- 2. Pierce and cut the white part of the ribs near the edge, or use scissors to cut them.
- 3. Slap the pork loose. After filming, the volume of the pork chop increased by 1.5 times.
- 4. Sprinkle black salt and pepper. Marinate for five minutes.
- Prepare soup within five minutes of marinating pork. Cut half an onion and put it into a small boiling pot.
- 6. Add broth, marinated sauce, soy sauce, and cooking wine in a ratio of 4:1:1:1. If there is no broth, use an equal amount of water and one teaspoon of chicken powder instead.
- 7. Boil for later use. You can add some salt to season it appropriately. I didn't add it, I think the salty taste of soy sauce is enough.
- 8. Sprinkle flour.
- 9. Spread the flour evenly on both sides of the pork chop.
- 10. Wrap the pork chop with flour, hang a layer of egg mixture (here are two eggs), and then wrap a layer of bread crumbs.
- 11. Wrap flour, egg mixture, and bread crumbs in three layers before frying in a pan.
- 12. Fry until golden brown on the bottom and can be flipped over, about 2-3 minutes.
- 13. Place the fried pork chop on an absorbent paper.
- 14. Pour out the remaining oil from the pan, add the soup from step 7, and bring to a boil.
- 15. Cut the pork chop into small pieces and put them back into the pot.
- In step 9, add two more eggs to the remaining egg mixture and stir until the yolk and egg whites can be separated.
- 17. Pour all the egg mixture into a pan.
- 18. Sprinkle scallions and switch to medium heat. When the soup is completely absorbed by the pork chop and egg mixture, turn off the heat.
- 19. At this point, the slippery eggs should be medium cooked, with a little bit still not set. If you mind, cover the pot (keep it off) and let it simmer for three minutes until the eggs are fully cooked.
