Steps to make 鱼香肉丝

  • 1.瘦肉切丝,用鸡蛋清、胡椒粉、料酒、老抽、1勺淀粉、1勺生抽抓匀,腌制20分钟。
  • 2.木耳泡发、洗净,若是大木耳要切成丝,小木耳就省了。
  • 3.胡萝卜、青椒切丝;葱、姜、蒜切末。
  • 4.取一小碗,放入香醋、白糖、2勺生抽、1勺淀粉、清水,调成酱汁,备用。
  • 5.炒锅放油,倒入肉丝,快速划散,翻炒至肉丝变色,盛出备用,油留下。
  • 6.放入葱、姜、蒜,炒香,加入豆瓣酱炒香出红油。
  • 7.下入胡萝卜、木耳,炒熟。
  • 8.下入青椒,稍翻炒。
  • 9.下入肉丝翻炒均匀。
  • 10.倒入调好的酱汁,大火快速炒匀收汁,出锅。
  • 11.酸甜微辣的鱼香肉丝,超级下饭。
