Steps to make 奶油蛋糕卷

  • 1.牛奶和油搅拌均匀至乳化。
  • 2.加入蛋黄。
  • 3.筛入低筋面粉。
  • 4.翻拌均匀。
  • 5.蛋白中分三次加糖,打发至有坚挺的倒三角。
  • 6.蛋白霜和蛋黄糊。
  • 7.取1/3蛋白霜到蛋黄糊中,翻拌均匀。
  • 8.再全部倒入剩余的蛋白霜中,翻拌均匀。
  • 9.加入蝶豆花粉,翻拌均匀。
  • 10.倒入烤盘中。
  • 11.放入预热好的烤箱中,155度,中层,烤20分钟左右(温度和时间要根据自家烤箱适当调整)。
  • 12.提前打发好的奶油(淡奶油打发,淡奶油和糖的比例是10:1)。
  • 13.蛋糕中间抹上奶油,借助擀面杖卷起,放入冰箱冷藏一个小时定型(抹奶油忘记拍了)。
