Steps to make 软炸金针菇

  • 1.将金针菇的根部切掉,然后用手将其撕成小朵,撕好后用水冲洗干净,并沥干水分装入碗中,接着加入一勺左右盐,用手抓拌均匀,腌制15分钟左右。
  • 2.金针菇腌制好后会出一些水分,用手拧干水分,装入碗中备用。
  • 3.将鸡蛋、淀粉、面饭装入大一点的碗中,用筷子将其混合成无大颗粒的面糊,如果有大颗粒搅不开,可以适当少加一些水搅拌就可以了。
  • 4.将金针菇放入调好的面糊中,用筷子将其混合均匀,使金针菇的表面均匀的裹上一层面糊。
  • 5.锅中倒入适量油,油温烧至5成热左右,放入金针菇炸制。金针菇在下锅的时候不要全部到里面,用筷子少量夹取,分次下入有过炸制。(判断油温的方法,将筷子一端放入锅内,筷子周围出现大量小气泡,油温差不多就是5成热了。)
  • 6.将金针菇炸制表面金黄的状态后,控油捞出,炸制时间差不多在2分钟左右。
  • 7.金针菇全部炸好后,将油温加热到7成热左右,进行二次复炸,炸至表面呈现焦黄状就可以了,时间一般在20-30秒左右。
  • 8.成品!
