冬瓜肉丸清汤

Steps to make 冬瓜肉丸清汤

  • 1.把后腿肉去皮剁成肉馅:我是按肥瘦2:8的比例剁的,做出来的口感会比较紧实有弹性,可以按喜欢的比例调整,买腿肉的时候也注意肥瘦的比例。同时切好冬瓜片。
  • 2.2、做葱姜水:南方人拌肉馅不爱放葱姜,剁得再细也会吃出来,但只放料酒总怕去腥不够 ,所以我折中了下,放葱姜水,姜和葱切完后,泡入热水几分钟,就成葱姜水了,在吃水环节中加这个就可以了。
  • 3.3、准备的调料:这是依次放入肉馅的调料:料酒、葱姜水、鸡蛋、香油。
  • 4.4、依次加入调料:一边加一边搅拌,水不要一下子都加入,边搅拌边加,到最后肉馅要有点松松的但仍有弹性的状态。
  • 5.5、用虎口挤出丸子的形状:把肉馅入在左手心,然后从虎口处挤出丸子的造型。
  • 6.6、烧水下肉丸:烧水,先放入冬瓜,再放入肉丸,煮至水开,撇去肉丸产生的浮沫,加入胡萝卜片。
  • 7.7、煮熟调味:再煮大概十五钟,加盐即可,肉丸不会松散,汤也很清很鲜美。
  • 8.8、其余的肉丸可以冻起来,平时放个汤,吃个火锅都会很美味哈。
