在网上看荞麦在降低血糖的作用,就买来给妈妈做,因为妈妈的血糖有点高。希望她吃了我做的爱心荞麦馒头,血糖能降下来。
 1、荞麦具有优质蛋白质特性和合理的人体必需氨基酸比例
  荞麦的蛋白质组成与一般的谷物(粮食)不同,既含有水溶性的清蛋白,又含有盐溶性的球蛋白,者占总蛋白质的50%以上,与豆类相似,并富含一般谷物所没有的且十分重要的赖氨酸。其精氨酸和
组氨酸含量也明显高于一般谷物。用联合国粮农组织(FAO)建议的氨基酸模式评价:若以鸡蛋为100,则牛奶为95,荞麦为93,而小麦和大米(水稻)仅分别为63和67。
  2、荞麦中含有丰富的不饱和脂肪酸
  油酸在人体内合成的花生四烯酸,是合成对调节人体生理机能起重要作用的前列腺素和脑神经的重要成分。不饱和脂肪酸能促进人体对胆固醇和胆酸的排泄,使胆固醇下降,并有明显的降血脂作用。荞
麦的脂肪中含有多种脂肪酸,但油酸和亚油酸占80%左右,不饱和脂肪酸约占90%。
  3、荞麦可以作为糖尿病患者理想的补充食物。此外,荞麦的无机矿物质含量亦十分丰富,其中镁、镉、硒、锌、铁、钾、钙和铜的含量均不同程度高于一般谷物。特别是镁的含量是小麦和水稻的3—4倍。医学证明,镁对预防动脉硬化、防治高血压具有重要的生理意义。

Steps to make 荞麦馒头

  • 1.荞麦和小麦放入盆里,加入少量糖。
  • 2.酵母加温水放置5分钟。
  • 3.加酵母水揉面,揉至光滑。
  • 4.天气有点冷,我直接放热水锅上了。
  • 5.2小时后,面发好了,拿出来放在案板上凉下。
  • 6.揉出面中的空气,开始做馒头,手拿一团面五指弯曲成鸡爪状,逆时针揉面团直到面团光滑,全部做好了,冷水上锅,让馒头二次发酵,大约40分钟。开中火烧35分钟,火千万不能太大,太大了水蒸气太多了就会流到下面的馒头上,导致馒头成一团死面。
