山楂炖蹄髈

Steps to make 山楂炖蹄髈

  • 1.将适量盐倒入锅中,加入桂皮、八角、香叶、花椒等大料翻炒,直至盐微微发黄;
  • 2. 冷却后,将擦干净水分的蹄髈放入盐中揉搓几次,再腌制十分钟后冲洗干净;
  • 3. 锅中放入冷水,将洗净的蹄髈放入里面,水煮开后,捞出些血沫,直至里面没有红血丝后捞出冲洗干净;
  • 4. 用姜片和葱段放入锅底;
  • 5.放入蹄髈在锅中间, 再放入山楂, 加入适量的料酒、老抽、生抽和冰糖, 再加入放了调味大料的钢球;
  • 6. 加入适量水和盐,
  • 7.按下高压锅炖煮功能键,并根据实际情况延长10分钟至50分钟,等蹄髈就炖好后过适量的时间气压低后才可以打开盖,翻个面,再泡上二个小时;
  • 8. 最后按下大火收汁功能键, 时间延长至15分钟; 注意收汁时不停的将汁浇淋在蹄髈上;
  • 9. 盛入盘中, 旁边摆些焯过水的西兰花, 点缀两颗山楂。
