自制糖桂花
一直很眼馋众多筒子做的糖桂花,今年终于让我给做上了。对于糖桂花最早的记忆始于外婆。小时候我是在外婆家长大的,外婆家有一株多年的桂花树,有两层楼那么高,每到秋天,院子周围便飘着迷人的芳香。记得有一次看到外婆用竹匾在收拾桂花,便问是干啥用的,外婆说是做糖桂花的,我便问怎么做,但到现在只记得外婆说要用点盐先腌一下,接下来要怎么做便全然不记得了。还好现在有网络,不会做的上网一搜就会有很多方法,但到底用哪种方法做呢,有点纠结,于是便几种都试了下。都用盐腌后一种蒸过,一种没蒸过,最后感觉差别不是很明显,不知是不是品种的原因,感觉不蒸过的更香些。

    Steps to make 自制糖桂花

    • 1.把摘下的桂花挑去杂物后用水快速洗净沥干。我摘了两种,金桂和银桂。
    • 2.水分干了后,放少量盐腌一个小时后用手挤干水。(一个小时后,用手挤只出来一点点水,最后的成品还是有点苦,所以其实可以再多腌一两个小时,那样挤去更多的水份后,会更不苦些)
    • 3.拌上一些白糖,水开后蒸10钟。
    • 4.取出晾凉。
    • 5.一层桂花一层白糖,放至白糖化了后,加入蜂蜜,再在冰箱放几天后即可食用。
