双麻月饼
这道月饼的馅料配方改编自传统双麻月饼。虽沿用了原来的名称,却偷换了概念。既没有遵照原方制作,也完全改变了成品的模样。传统的内馅加上广式饼皮,有一种混搭的感觉。

  • 白糖150克
  • 75克
  • 白芝麻25克
  • 黑芝麻25克
  • 核桃仁10克
  • 花生15克
  • 冬瓜条22克
  • 樱桃果脯15克
  • 玫瑰酱13克
  • 广式饼皮面团365克

Steps to make 双麻月饼

  • 1.准备馅料
  • 2.将干果仁和果脯切碎倒入大碗,混合均匀
  • 3.加入白糖
  • 4.拌匀
  • 5.加入玫瑰酱和油
  • 6.拌匀
  • 7.倒入熟面粉
  • 8.拌匀
  • 9.将馅分割成16克一个的小球,面团分割成13克一个的剂子
  • 10.将面剂按扁
  • 11.放入馅料
  • 12.像包汤圆一样包起来
  • 13.收口搓圆,逐个做好
  • 14.月饼模中放少量面粉,摇晃均匀后倒出
  • 15.放入月饼坯
  • 16.扣在案台上
  • 17.压出花型
  • 18.摆入烤盘,放入预热200度的烤箱,烤约5分钟,
  • 19.定型后取出,刷蛋液,再放回烤箱,继续烤10-15分钟
  • 20.表面金黄,出炉
