腌笃鲜-----------鲜的眉毛全掉下来
腌笃鲜是江南地区汉族特色菜肴,苏州、宜兴、无锡等江南地区的民间家常菜,为上海本帮菜、苏帮菜、杭帮菜中具有代表性的菜色之一。腌笃鲜是用春笋和鲜、咸五花肉片一起煮的汤,腌”,就是咸的意思;“鲜”,就是新鲜的意思;“笃”,就是用小火焖的意思。菜品口味咸鲜、汤白汁浓,肉质酥肥,笋清香脆嫩,鲜味浓厚。所以腌笃鲜是每年春天必吃的一道菜。而且百吃不厌。

Steps to make 腌笃鲜-----------鲜的眉毛全掉下来

  • 1.准备所需主料(这里是新鲜排骨和咸排骨)。
  • 2.两种排骨放入水中焯一下。
  • 3.咸排骨放入烧锅内,放入姜,葱,适量盐,盖上锅盖。
  • 4.笋切滚到块备用。
  • 5.咸排骨煮开后,放入料酒,盖上锅盖,大火煮开后转小火煮30分钟左右。
  • 6.煮到汤汁浓白。
  • 7.放入新鲜排骨。
  • 8.放入笋一起煮,煮开后转小火煮30分钟左右。
  • 9.莴笋切滚刀块备用。
  • 10.取出一小部分腌笃鲜,放入小锅内,煮开后放入莴笋,煮熟莴笋即可食用。
