久围了的小蛋糕哈,曾经是全家人的最爱,但好久没有烤制了,因觉得蛋糕只能做零食吃,上班族空闲时间不充裕,有时间做烘焙的话,面包是常项,即能零食,又能早餐充饥,一举两得。两天前与同事聊天时谈到了蛋糕的制作,啊哈,勾起了被我快遗忘的记忆,休班的日子,橱柜的角落里挖出了蛋糕模子和纸托,搜罗出了蛋糕方子,嗯,厨房里又飘出了散发着淡淡橄榄果香的、诱人的蛋糕的味道......

  • 橄榄油50克
  • 白糖40克
  • 1克
  • 白醋少许

Steps to make 全麦纸托小蛋糕

  • 1.称好的全麦粉黑黑的,与淀粉形成鲜明的对比啊
  • 2.纸托放入蛋糕模中,摆在烤盘上,待用
  • 3.分离的蛋清,盆子一定无油无水哈
  • 4.分离的3个蛋黄和一个全蛋放在另一个无油无水的盆中
  • 5.蛋黄盆中加入10克糖和1克盐
  • 6.打蛋器搅匀,可以用手动打蛋器哈
  • 7.分三次加入50克的橄榄油,每一次一定要搅拌均匀后再放下一次。
  • 8.蛋黄液拌匀后,筛入混合面粉
  • 9.用刮刀拌匀,没有面粉颗粒,待用,这时把烤箱170度预热10分钟
  • 10.蛋清液中加入少许白醋,也可以加柠檬汁
  • 11.加入10克白糖,用电动打蛋器1档打出鱼眼泡
  • 12.再加入10克白糖,换2档继续打至稍细腻
  • 13.加入剩下的白糖,逐渐一级级换高档,打至奶油状,提起打蛋器蛋白霜能坚起牛角尖
  • 14.取1/3蛋白霜加入蛋黄糊中,翻拌均匀
  • 15.第二次加入1/3的蛋白霜,继续翻拌均匀
  • 16.将蛋糕糊全部倒入剩下的蛋白霜中,翻拌均匀
  • 17.将蛋糕糊倒入模具中,轻轻磕振两下,入烤箱170度,25分钟
  • 18.出炉后,晾凉食用
