  • 1.将鸡蛋分黄、清分别打入碗中。
  • 2.咸蛋黄、皮蛋分别切成小丁备用。
  • 3.蒸碗内壁粘上厨房锡纸,刷少许油。
  • 4.咸蛋黄丁、皮蛋丁混合着放进蒸碗中。
  • 5.蛋白打散,滤掉泡沫倒入蒸碗里,盖上保鲜膜。
  • 6.待水开后入蒸锅小火蒸10分钟。
  • 7.定型后开锅,倒入打撒的蛋黄液再蒸5分钟。
