芒果双皮奶  我家兰兰姐の最爱
前两天突然好想吃双皮奶~~ 于是叫送牛奶的大哥多送一瓶水牛奶!谁知道 当天是没有的!要等几天,昨天水牛奶送来了,可是吃了螺蛳粉,那个撑啊!!!只好等到今儿才做了,翻翻冰箱,发现还有一个芒果呢! 好吧,做个芒果双皮奶,国庆那时,在广州一个小巷子的甜品店吃过这个,当时看菜单很好奇,以为就是果味的双皮奶! 第一个就点了,最后还打包一份上了飞机,多么忠实的芒果控啊!!!谁知道,庐山真面目也就是普通双皮奶加上芒果粒罢了。。。没多大难度!不过还是很喜欢。

Steps to make 芒果双皮奶 我家兰兰姐の最爱

  • 1.1.备齐材料,如图。 (没有水牛奶的话,用全脂牛奶也行,不能用脱脂的喔!不然没有双皮奶最关键的奶皮。^_^)
  • 2.2.将牛奶倒入锅中加热,有点冒泡泡的时候就关火,不要煮沸腾了喔!
  • 3.3.倒入碗中,自然冷却之后,就会结出厚厚的奶皮啦~~
  • 4.4.鸡蛋用分离器分离出蛋清,加入25克白糖,搅打均匀。
  • 5.5.将放凉的牛奶用牙签轻轻挑起奶皮,把牛奶倒入蛋清中。(记住要留一点点牛奶液在碗中喔,不然奶皮浮不起来的。)
  • 6.6.这时可以看到奶皮慢慢浮上来了
  • 7.7.包好保鲜膜,放入凉水锅中蒸10分钟关火,盖盖子闷5分钟。(我试过蒸15分钟,再闷五分钟的,我觉得还是十分钟的比较嫩滑!!软软的,入口即化的。很好吃,所以现在每次都只蒸十分钟)
  • 8.8.蒸好后,稍稍凉一点,放上小勺子,不沉下去的,就说明已经蒸熟透了。
  • 9.9.这时加入切好的芒果粒,哇,好多芒果,爽啊!!
