脆爽小黄瓜
今天这道小黄瓜甚是好吃。香辣脆爽,非常下饭!咱湘妹子终于一次性过足了辣瘾。不知不觉中午又多吃了一碗饭,最近几个月体重蹭蹭蹭往上涨,这可如何是好?
上个月还是我生日,在饭店点了这道菜,第一口就被这香辣脆爽的口感给惊呆了。第一次吃到如此好吃的小黄瓜。于是向老板打听用的是什么黄瓜,老板说是水果黄瓜。本来还想问下做法的,后来转念一想算了,人家做生意的告诉你了还怎么靠这个生存呀。咱有时间了自己折腾呗。以前在南方超市经常会看到有那种翠绿翠绿的小嫩黄瓜卖,来北方后就没有发现这种黄瓜了。我用了另外一种叫做“白草黄瓜”的来代替,一样的脆爽,一样的好吃。和店里的口味非常接近了。

Steps to make 脆爽小黄瓜

  • 1.小黄瓜切薄片,先用少许白糖腌制15分钟左右。(糖不要太多,少许即可)
  • 2.15分钟后会渗出少许水,将水倒掉。再撒入适量盐,腌制半小时。半小时后倒出腌出的水,用手将黄瓜挤干水份。(盐的量比糖要多,目的是为了把黄瓜里的水分逼出来)
  • 3.腌制黄瓜时候准备配菜。猪肉切小丁,大葱切小段,姜切末,大蒜切片,青红椒切圈,另备花椒少许。
  • 4.锅内适量底油,放入猪肉丁翻炒。
  • 5.下入花椒粒和姜末,煸炒出香味来。
  • 6.下入葱段和蒜片翻炒。
  • 7.放入青红椒翻炒,转成大火。
  • 8.最后下入腌好的黄瓜片。加少许蚝油和生抽调味。试试咸淡如何,酌情添加盐。
  • 9.出锅咯。
