家宴上的五星菜【酸汤肉片】酸辣爽口下饭菜
周末都会跟朋友家人聚会家宴互相走动一番,做点好吃的犒劳一下自己辛苦工作,跟家人在周边走走看看,一起坐下来吃一顿饭聊聊天也许更畅快。

前段时间老妹从海南带了几瓶黄灯笼辣椒酱,我一直都是用来蘸酱吃,最开始以为这个黄灯椒就是市场上卖的黄色彩椒做的,别说小云没告诉你哦!这个黄灯椒那味道真不是一般的辣,连小云这种无辣不欢的主都是辣的耳朵都嗡嗡的可是还想吃.....有朋友说可以用黄灯椒酱做菜?比如大家都喜欢吃的肥牛,猪肉,牛肉,猪腰子等等,用黄灯椒酱做调料涮味道应该不错,今天苦思了半天不知道做啥菜,突然灵机一动何不把酸汤肥牛改良一下,把肥牛换成猪肉片,这样想吃的时候随时就能吃,不用特地到超市去卖肥牛了,所以今天分享的这道料理就是馆子里人气颇高的菜肴“酸汤肥牛”的改良版本【酸汤肉片】,小云做菜喜欢随手拈来,这样既方便又快捷不用为了做一道菜特地去找食材,美食就是这样,随意的搭配一下说不定就能给你一些小惊喜哦!!你也可以把肉片换成牛肉,酸汤才是这道菜至关重要的一个环节,汤的调味要酸辣得恰到好处。

Details of ingredients

  • 猪瘦肉300克
  • 空心菜250克
  • 海南黄灯笼辣椒酱2汤勺
  • 少许
  • 黄酒15ml
  • 胡椒粉少许
  • 姜末少许
  • 2汤勺
  • 泡野山椒10个
  • 小葱少许
  • 鱼露1小勺
  • 大红浙醋1大勺
  • 青红小尖椒各2根

Steps to make 家宴上的五星菜【酸汤肉片】酸辣爽口下饭菜

  • 1.准备材料:猪瘦肉,尖椒,野山椒,葱,姜
  • 2..分别把泡山椒切碎,青红小尖椒切圈。小葱切末改刀切好备用
  • 3.猪瘦肉切片加盐,白胡椒粉,黄酒拌匀,腌制15分钟左右,空心菜洗净控干水分
  • 4.锅中加入清水,煮沸,下入空心菜烫熟,
  • 5.捞出控水后放入容器
  • 6.锅中新加入清水,煮沸,下入腌制好的猪肉片汆烫至肉变色即可捞出,
  • 7.焯烫好的肉片放在装空心菜的容器里
  • 8.准备好黄灯笼辣椒酱
  • 9.红浙醋或者白醋适量。(我更喜欢浙醋味道好,如果家里没有的就用白醋替代)
  • 10.炒锅加热,锅热后放油烧热,倒入姜末和野山椒末稍炒
  • 11.再下入黄辣椒酱2勺,在锅边淋入10ml的黄酒,再倒入高汤或清水煮开
  • 12.调入盐、胡椒粉、鱼露和大红浙醋调味后放入切好的尖椒圈稍煮20秒关火,连汤倒入容器中,最后撒上小葱末即可。(在倒汤的时候可以用漏勺过滤掉所有杂质,这样汤色更好看,小云就是用漏勺过滤了,然后把过滤的调料放一些在面上,这样上桌更好看哦!)
