【浙菜】小黄鱼烧年糕 (宁波家常菜)

    Steps to make 【浙菜】小黄鱼烧年糕 (宁波家常菜)

    • 1.将小黄鱼宰杀洗净后沥干水分。
    • 2.把葱,姜,蒜切好备用。
    • 3.把沥干水分的小黄鱼均匀地拍上面粉后,再倒适量油加热,入锅用中小火慢煎。(拍面粉是让鱼皮不破),剪成金黄色后捞出沥油。
    • 4.锅里留余油,把葱姜蒜爆香。
    • 5.爆香之后把煎好的小黄鱼放进去。
    • 6.再倒入1勺料酒、适量盐、酱油1勺、一碗清水,辣椒粉,盖上锅盖,大火煮开后转小火炖一会儿,让鱼入味。
    • 7.锅里汤汁耗去三分之一时,放半勺糖,倒入切好的年糕片。让年糕尽量浸在汤汁里,再盖上锅盖,用中小慢炖一小会。
    • 8.等到汤汁稠腻了就关火,撒上点鸡精,葱花,即可出锅了。
