Steps to make 香辣小龙虾

  • 1. 左手拿着虾子,将小龙虾腹部朝上,在清水下直接冲洗刷干净;
  • 2. 握住小龙虾正面朝上, 找出虾尾中间的那片;
  • 3. 从尾巴处将虾线(肠)拔出;
  • 4. 将虾水分沥干;
  • 5. 准备好其他材料,
  • 6. 热锅凉油, 放入较多些的油, 下入处理好的小龙虾;
  • 7. 不停的翻炒,直至虾变为红色,煸炒出水分后捞出;
  • 8.锅中留少许底油, 下入豆瓣酱翻炒;
  • 9. 翻炒出红油后,加入葱姜蒜、八角等大料继续翻炒;
  • 10. 翻炒加水或者啤酒(刚刚淹入龙虾位水量)、酱油和料酒大火煮开;
  • 11. 下入刚油煸过的小龙虾煮,煮上20分钟(以量的大小来决定);
  • 12.加入盐,大火收汁;
  • 13. 最后加入点糖一起翻炒均匀;
  • 14.让小龙虾在汤汁里面泡上一会儿;
  • 15. 将它们装入锅中。
