清香柠檬派
清新素雅的柠檬派,阳光般的色彩,即使是在夏天也那么明亮。咬一口柠檬派,外皮的酥脆,内馅的清新酸甜,特别是经过冷藏之后,从外爽到内的冰爽。所以,抱着烤箱折腾了一阵子,这入口的清爽顿时将闷热一扫而净。

Steps to make 清香柠檬派

  • 1.甜派皮材料准备好:低筋面粉120克,糖粉25克,盐1/8小匙,无盐黄油65克,蛋黄15克,牛奶15克;这个用量可以做一个7-9.5寸的派皮
  • 2.低筋面粉、糖粉、盐过筛入盆中,黄油切小块同入粉盆中
  • 3.用刮刀将黄油和粉类混合成小粒粒状,然后将蛋黄打散加入粉粒中
  • 4.用刮刀将蛋黄与粉粒混合成面团,不要过度搅拌按压,成团就可以了
  • 5.将面团放在保鲜膜上,用手按压成厚约7、8毫米的薄片,然后入冰箱冷藏至少30分钟以上
  • 6.冷藏变硬的面团取出来,在揉面垫上撒少许面粉,在面团上也撒少许面粉,擀成厚约3毫米的面片,厚度也随派盘大小来调整
  • 7.用擀面杖将面皮卷起,移到派盘上,用手掌轻轻将派皮按压进派盘中,将多余的派皮贴补到薄或者少的地方,将全部的材料都用完;再用餐叉在上面均匀扎孔,防止烘烤时不平;此时烤箱开始预热180度
  • 8.用锡纸将派皮罩住,上面铺烘焙石,用绿豆红豆也可以
  • 9.预热时间结束,ACA语音烤箱提醒可以将食物送入烤箱,这里将派皮送入预热好的ACA语音烤箱中层,按“启动”键,烤箱开始烧烤
  • 10.烤10分钟后,将烤箱暂停,派盘取出,静置两分钟后,将锡纸和烘焙石移走,派皮上刷一层蛋清
  • 11.再重新放入烤箱中,按“启动”键,直到烘烤完成
  • 12.烤好的派皮颜色金黄,放在派盘中自然晾凉
  • 13.柠檬奶油馅制作前,先来准备几个柠檬,用盐水将柠檬表皮搓洗,再冲净
  • 14.用柠檬刨丝器将一个半的柠檬黄皮削下来,里面的白肉不要削下来
  • 15.再用柠檬挤压器挤出150克的柠檬汁
  • 16.柠檬奶油馅的材料准备好:全蛋155克,细砂糖145克,柠檬汁150克,柠檬皮1.5个,无盐黄油150克
  • 17.鸡蛋加细砂糖打散,隔水加热,让砂糖完全融化
  • 18.将柠檬汁倒入蛋液中,不停搅拌
  • 19.火可以适当加大,让水沸腾起来,这样鸡蛋液能很快成熟变粘稠
  • 20.将鸡蛋液锅端离热水,将柠檬屑和黄油投入其中,迅速搅拌融化
  • 21.将晾凉的柠檬奶油液倒入派皮中,表面摊平,盖个高点的盘子送入冰箱冷藏2小时左右
  • 22.冷藏后的柠檬奶油派脱模,阳光般的亮丽、清新
