春天这个季节蒲公英刚刚透出嫩绿的芽叶,正是食用的好季节。蒲公英富含天然抗生素,可以生吃,拿采来的嫩叶洗净,蘸着醋、酱油,虽然嚼起来微苦,却别有风味。
我用鲜嫩的蒲公英调馅子,压制透明的馄饨皮,包了好多皮薄馅鲜的大馄饨,煮了满满一大锅。蒲公英清新的味道挟裹着热气,纠缠鼻尖,挑逗味蕾,让人欲罢不能。

  • 1.1、和一块稍硬些的冷水面团饧30分钟,饧好的面平均分成三份用擀面杖擀开,压面机从1档开始压制6档,面皮压得薄如纸再切成三角的或梯形的面皮。(馄饨皮材料:面粉150克 、水60克、淀粉适量、盐3克)
  • 2.2、鸡蛋打散煎成蛋饼,再切成小细丁放凉。
  • 3.3、蒲公英洗净焯水捞出过冷水备用。
  • 4.4、沥过水的蒲公英切碎加鸡蛋丁,倒入油拌匀。
  • 5.5、倒入蚝油和酱油。
  • 6.6、加入提前泡好的虾米和盐。
  • 7.7、加入切好的韭菜,倒入香油拌匀。
  • 8.8、取一个馄饨皮包入适量馅,丛一端卷起包住馅。
  • 9.9、将两左右两角交叉捏紧按一下就好了,沸水煮熟即可。(或在汤里加蛋加紫菜,也可淋上红油)
