紫薯小山卷
自从学会做蛋糕卷,就不用再找什么理由做奶油蛋糕了。想吃什么口味卷什么东西!奶油、芝士、巧克力、咖啡、草莓、芒果。。。。。当然还有紫薯啦!

  • 蛋黄5个
  • 砂糖66g
  • 蜂蜜25g
  • 低筋面粉58g
  • 蛋白4个
  • 黄油12g
  • 牛奶29g
  • 紫薯2个
  • 淡奶油100g
  • 砂糖20g

Steps to make 紫薯小山卷

  • 1.蛋黄加入12g细砂糖、蜂蜜25g
  • 2.用打蛋器打至颜色略微发白
  • 3.蛋白分三次加入54g细砂糖,打至湿性发泡
  • 4.将1/3打发好的蛋白霜加入蛋黄中,用刮刀翻拌均匀
  • 5.加入过筛后的低筋面粉
  • 6.翻拌均匀
  • 7.倒入剩下的蛋白霜中
  • 8.继续翻拌均匀
  • 9.牛奶和黄油加热至70度
  • 10.加入到面糊中
  • 11.拌至面糊呈现光泽即可
  • 12.将面糊倒入铺了烘焙纸的烤盘中,轻震几下震出大气泡,
  • 13.放入预热180度烤箱, 烘烤13分钟,取出
  • 14.2个紫薯蒸熟去头去尾,剥去紫薯皮后放入保鲜袋,用擀面杖压成紫薯泥,大概150克左右
  • 15.把紫薯泥放入盆中,加砂糖,淡奶油
  • 16.用电动打蛋器搅打均匀均匀成紫薯奶油馅
  • 17.冷却后,把蛋糕四周切整齐
  • 18.均匀抹上打发好的紫薯奶油馅
  • 19.用油纸慢慢卷起,放冰箱冷藏定型半小时以上
  • 20.从冰箱取出切段,即可
