自制零食——苏打饼干
自制零食系列,苏打饼干,酥酥脆脆的苏打饼干一直是我最喜欢的饼干之一,怎么吃都没腻过,超市卖的大多放的油都不太好,自己烤制出来的更是酥脆可口,层次分明,芝香味十足,作为零食也是很不错的选择呢,

Details of ingredients

  • 高筋面粉100g+30g
  • 酵母1/2小勺
  • 牛奶45g
  • 芝麻10g
  • 色拉油25g+10g
  • 1/4小勺+1/4小勺+适量
  • 小苏打1/4小勺

Steps to make 自制零食——苏打饼干

  • 1.把100g高筋面粉、25g色拉油、酵母、1/4小勺盐、牛奶和小苏打混合,
  • 2.和成光滑的面团,放在温暖的地方发酵至1.5倍大,(我大概用了40min左右,这个具体看温度)
  • 3.把30g高粉、10g色拉油、芝麻和1/4小勺盐混合,制作油酥,
  • 4.和成油酥,
  • 5.把发酵好的面团排尽空气,揉制成团,
  • 6.擀成薄片,
  • 7.把左右两边向中间折起,
  • 8.再把上下两边三中间折起,形成三折,
  • 9.折好的成这样,
  • 10.再把他/它擀开,
  • 11.左右折起,
  • 12.上下折起,
  • 13.同样折成一个小被子的形状,(重复以上动作三次,)
  • 14.把油酥擀开,放在擀成长方形的薄片中间,
  • 15.上下折起来,再把左右两边封口,把油酥完全包裹在面片中间,
  • 16.重复之前三折面团的动作3次,然后擀成薄片,
  • 17.大概这么厚,
  • 18.切出你喜欢的形状来,用叉子在上面叉出小气孔来,
  • 19.放在烤盘上,盖上一层锡箔纸,中层180度,15min左右,然后拿掉锡纸烤,(二次烘烤时最好经常观察,烤到表面有一点点变色即可,)
  • 20.咬开,里面层次分明,酥脆可口,
