Steps to make 爆炒白蚬子

  • 1.蚬子要在盐水中静置半小时以上,吐一吐沙子,让后锅里水开放入2片姜,料酒倒入蚬子煮一下,蚬子全部张开口之后捞出过冷水。
  • 2.冷油放白糖,糖化后倒入葱段,紫洋葱丝,蒜片,小米椒丝,姜片,香菜段翻炒几下。
  • 3.炒出香味后倒入过好冷水的蚬子大火翻炒。
  • 4.放入蒜蓉辣酱快速爆炒至汤汁均匀。
  • 5.放入耗油爆炒。
  • 6.关火倒入蒸鱼豉油翻炒几下即可。
  • 7.成品出锅。
