想吃口感细腻的芝士蛋糕又怕胖的MM看过来吧。口感上不输给芝士蛋糕,味道上也没有芝士蛋糕甜腻。细腻的香香的。一款低糖低油低脂的高仿蛋糕。满足了你的味蕾同时吃起来零负担。

  • 鸡蛋4个
  • 酸奶200ml
  • 玉米油25ml
  • 低粉70克
  • 玉米淀粉10克
  • 白砂糖20克
  • 蔓越莓10克
  • 2克

Steps to make 蔓越莓酸奶戚风

  • 1.蛋黄分离后加入玉米油搅匀再加入酸奶搅匀后筛入低粉搅拌至无颗粒。放在一边备用。(我用的是莫斯利安,一罐正好200ml)
  • 2.蛋白加盐打至粗泡后加入1/3糖打至细腻后再加入1/3糖打至有纹路后倒入剩下1/3糖和玉米淀粉打至硬性发泡状态。(就是提起打蛋器有直立小尖尖)
  • 3.先盛2勺蛋白到蛋黄糊里翻拌搅匀再盛2勺翻拌搅匀然后倒回蛋白盆里翻拌完全。(动作要快要轻)预热烤箱上下火160度
  • 4.8寸模具底部用锡纸包好。蛋糕糊倒进去提起模具10cm然后松手自然落到台子上震出气泡。表面撒满蔓越莓
  • 5.模具放入注满水的烤盘。倒数第二层。上下火160度60分钟。烤至30分钟后上色加盖一层锡纸。(要快速打开烤箱门快速盖好关上)
  • 6.时间到出炉。无需倒扣。
  • 7.凉后轻微回缩。
  • 8.切件品尝。口感非常细腻。蛋糕拿在手里很轻盈。
