  • 黄瓜3根
  • 蒜瓣4瓣
  • 花椒5克
  • 生姜2片
  • 香菜几颗
  • 10克(腌黄瓜用)
  • 生抽5汤勺
  • 老抽1.5汤勺
  • 香醋4汤勺
  • 蚝油1勺
  • 香油1勺
  • 10g

Steps to make 腌脆黄瓜

  • 1.黄瓜一定要选新鲜的,搓洗干净,擦干水分。
  • 2.去掉瓜瓤,这样腌好后才有脆脆的口感。
  • 3.切成长条状。
  • 4.装入大碗里,加入盐,腌制十分钟。
  • 5.将小米辣,生姜,香菜,蒜,清洗干净后,用厨房纸巾擦干水分。
  • 6.加入适量油,油烧至冒烟后关火,加入小米辣,生姜,蒜,花椒,呛出香味
  • 7.除香菜叶和香油,把所有调料放进去,搅拌融化。
  • 8.用筷子把腌好的黄瓜夹入调料汁里,不要直接倒进去,腌制的黄瓜水不要了。
  • 9.完全搅拌均匀后腌制俩个小时以上,期间要时不时搅拌一下,入味。
  • 10.腌制好后加入香菜叶和香油。
