Steps to make 6寸戚风蛋糕

  • 1.准备食材:纯牛奶,玉米油,低筋面粉,白砂糖,鸡蛋。
  • 2.蛋黄与蛋清分离。
  • 3.蛋黄盆中加入20克白砂糖、牛奶和玉米油,用蛋抽搅拌均匀,使之充分乳化,这是保障戚风蛋糕爬升的关键。
  • 4.筛入低筋面粉。
  • 5.用蛋抽“之”字形搅拌均匀。
  • 6.用电动打蛋器打发蛋白,当出现鱼眼泡形状之时,加入10克白砂糖。
  • 7.当出现肥皂泡沫时加入10克的白砂糖。
  • 8.当出现纹路时加入剩余的10克白砂糖。
  • 9.当提起打蛋器出现小尖角时停止打发,既为湿性和干性发泡之间,可以制作戚风蛋糕。
  • 10.用刮刀取1/3的蛋白霜加入到蛋黄盆中。
  • 11.用翻拌的手法搅拌均匀。
  • 12.将搅拌好的蛋糕糊倒入蛋白盆中。
  • 13.继续用翻拌的手法搅拌均匀。
  • 14.将搅拌好的蛋糕糊倒入6寸戚风蛋糕模具中。
  • 15.用筷子搅动排气。
  • 16.清磕模具震出大气泡,以上下火预热烤箱。
  • 17.将模具送人烤箱烤60分钟出炉。
  • 18.成品图。
