    Steps to make 东北酱大骨

    • 1.脊骨斩大块冷水下锅,焯去血沫和杂质。
    • 2.捞出后用温水洗净控干水份。
    • 3.锅中加少许水,放入香叶、桂皮、小茴香、八角、花椒飞一下水。这么做一是为了清除灰尘,二是为了炒制时不容易炒糊。
    • 4.控干水分后直接下入锅中,煸出水汽,炒出香味。
    • 5.装入大料盒内备用。
    • 6.炒锅上火,加少许底油,下入脊骨炒出香味。
    • 7.加入少许白糖(炒糖色)。
    • 8.和脊骨一块翻炒,至脊骨上色后加入葱段、姜块炒出香味。
    • 9.倒入开水烧开,加白糖(提鲜)、大酱(多一些,突出酱香味)、酱油定好味。
    • 10.倒入电压力锅内胆内,放入大料盒,压15分钟左右至成熟。(如用炒锅,则盖上盖小火焖制一小时左右。)
    • 11.压好的脊骨重新倒回炒锅中,用大火收一下汁即可。
