香辣脆皮豆腐
我今天分享的做法用到的豆腐是北豆腐,也叫卤水豆腐,质地比较硬,含水量相对少一些,不能用内脂豆腐代替,如果你买到的卤水豆腐比较软,可以放一放,等水分析出以后就会变硬了,这道菜豆腐的部分因为加了玉米淀粉来煎制,所以吃起来的口感是外酥里软的,外层是酥脆的,最最大的亮点是酱汁,真是一款巨好吃灵魂酱汁,当作各种蘸料也特别合适,对于爱吃辣的朋友来说,简直是大爱!

  • 豆腐1块
  • 鸡蛋液1个
  • 1瓣
  • 白糖1勺
  • 白芝麻1勺
  • 辣椒粉1勺
  • 孜然粉1勺
  • 黑胡椒粉1勺
  • 味极鲜2勺
  • 蚝油1勺
  • 1勺

Steps to make 香辣脆皮豆腐

  • 1.卤水豆腐控水,到比较硬的状态,切成长方形薄片。
  • 2.准备玉米淀粉和鸡蛋液。
  • 3.来制作灵魂酱汁,蒜切碎,白芝麻,白糖,辣椒粉(我用的是市售的成品辣酱代替的),孜然粉,黑胡椒粉,白糖,比例可以根据个人口味调整,不吃辣的就把辣椒粉去掉即可。
  • 4.加入味极鲜酱油,蚝油,香醋,搅拌均匀,酱汁就制作完成了。
  • 5.准备煎锅,倒入少量油即可,豆腐先包裹一层玉米淀粉,再包裹一层鸡蛋液,下锅煎,小火,不着急翻面。
  • 6.煎至底面金黄定型,翻面煎另一边。
  • 7.底面也基本煎好的时候,把调好的酱汁均匀刷在豆腐表面。
  • 8.盛出,表面撒白芝麻,香葱碎装饰,能吃辣的再撒一点小米辣,超级超级好吃。
  • 9.好吃。
