爽口腌萝卜皮
现在正是吃萝卜的时候,萝卜肉拿来炖牛腩了,萝卜皮拿来腌一下配粥下饭,以前我还能吃点辣的时候,加了蒜末和泡椒,味道超爽,唉,可惜现在不能吃辣,只能弃泡椒不用,能吃辣的筒子强烈推荐加进去哈。不过有失也有得,以前我做成辣的,儿子碰都不碰,现在不辣了,那天早上给他吃了几根,大呼好吃,这算不算是一个“得”哈!

    Steps to make 爽口腌萝卜皮

    • 1.一根萝卜对半切成两段,一段竖起如图切下皮,皮上要带一层肉,口感比光是皮要好。
    • 2.依次把萝卜皮都切下。
    • 3.取一片萝卜皮切竖纹,但不要切断。这样萝卜皮易入味,我试过不切纹的,入味要慢些。
    • 4.再切成小段。
    • 5.先加一勺糖拌匀腌出水。
    • 6.再加适量盐拌匀腌出水,倒去水后,再加适量盐腌,出水后再倒去多余水。(注意,这里是用了两遍盐腌,总的时间约半天或一个晚上,最好放冰箱。)
    • 7.加适量姜丝、鲜味生抽、白醋,几滴老抽(不喜深色的可不放)、一勺蜂蜜拌匀后放冰箱冷藏十几个小时。(喜辣的这步可加泡椒,再加点泡椒水)
    • 8.再淋适量麻油拌匀即可食用,或加麻油后再放冰箱冷藏几小时也可。
