红糖蜜汁【糯米藕】
立秋过后,鲜藕成为人们家宴的必备菜之一。藕生于污泥而一尘不染,中通外直,不蔓不枝,自古就深受人们的喜爱。
    藕含有淀粉、蛋白质、天门冬素、维生素C以及氧化酶成分,含糖量也很高,生吃鲜藕能清热解烦,解渴止呕;糯米藕有养血,健脾,开胃的食疗效果,藕中又添加了具有补中益气,健脾养胃的糯米,把这两样结合在一起,做出补血润肺,甜糯适口的糯米藕。
    好吃的糯米藕是很多人喜欢的一款美食,老幼皆宜,男女都爱,它的口感和味道征服了很多挑剔的胃,其实它的做法很简单只要按部就班的照着下面的做法一步一步的来就可以收获美味了。
    藕分为红花藕、白花藕和麻花藕三种。红花藕,藕形瘦长,外皮褐黄色、粗糙,含粉多,水分少,不脆嫩;白花藕肥大,外表细嫩光滑,呈银白色,肉质脆嫩多汁,甜味浓郁;麻花藕呈粉红色,外表粗糙,含淀粉多。做糯米藕最好选择麻花藕,也就是我们常说的粉藕。
    做糯米藕选藕时,要选个大浑圆的,两头不漏孔的,漏孔的里面有泥沙不好清洗,而且灌好的糯米容易漏出来

Steps to make 红糖蜜汁【糯米藕】

  • 1.原料图:糯米提前用水泡上,至少三小时以上。我是昨天半夜泡的,放冰箱,今早用;两节藕削去皮备用,根据我家锅的大小,我选了一大一小; 红糖半碗、冰糖一把、红枣洗净去核、冠生园蜂蜜;一根筷子、适量牙签。
  • 2.将藕洗净,切去一端藕节(不要切很短,很短孔小不方便灌米),藕节留着待用,使藕孔露出,再将孔内泥沙洗净,沥干水分;
  • 3.藕立起来,把泡好的糯米顺藕孔装进去,用筷子边塞边边压实直到装满为止(单用筷子往里面插实在是太慢了,我用零食袋做了个小漏斗,将漏斗尖端插在藕孔里,用小勺子舀一勺糯米放漏斗里,然后再用筷子将糯米插入藕孔中,效率大大的提高了)
  • 4.塞满后 用筷子再插一插 确保藕孔里边是糯米是塞实的
  • 5.将切下的藕节原封不动的合上,再用牙签扎紧固定,牙签插进去的时候要用点力,以防漏米
  • 6.藕都灌好后,放入压力锅中,兑水淹没莲藕。放入红糖、冰糖、红枣、蜂蜜(适量。我放了大概4汤匙的量供参考)
  • 7.压力锅盖锅盖、接通电源、调肉类30分钟左右。
  • 8.煮好的糯米藕,待稍凉一会后取出,小心拔掉牙签
  • 9.将藕切成宽约0.8cm的厚片 藕断丝连哈
  • 10.将煮藕的汤汁浇在切好的藕片上即可(如果舀几勺汤汁在锅中勾个薄芡,再浇在切好的藕片上会更漂亮)
