Steps to make 蛋黄小饼干

  • 1.准备食材。
  • 2.蛋黄中放入十克糖粉,三个鸡蛋磕了一个双黄的,所以有四个蛋黄。
  • 3.用电动打蛋器将蛋黄打发,体积变大颜色变浅,蛋黄糊滴入碗中不会很快消失状态即可,用电动打蛋器刚开始可以高速打发,等颜色变浅后改用低档整理气泡。
  • 4.将二十克玉米淀粉和二十五克奶粉筛入大碗中,没有淀粉和奶粉就用低筋面粉代替即可。
  • 5.用刮刀翻拌均匀后放入少许黑芝麻,再次搅拌均匀,跟平时我们做蛋糕糊一样翻拌,以防消泡。
  • 6.将面糊装入一次性的裱花袋中,借助刮板把面糊向前推至顶部即可,顶部用剪刀剪一个小口。裱花袋可以套上高一点的杯子上或套量杯上,这个倒糊的话就不会弄到外面,倒好后放桌面上,再用刮刀慢慢向前推,裱花袋大口可以用夹子夹起来,也可以直接绕右手中指上直接挤。
  • 7.将面糊挤在烤盘上。挤的时候可以先把烤箱预热,等挤好后就可以直接入烤箱了。
  • 8.烤箱上下温150度预热五分钟,放入烤盘,上下温度150度烤十分钟左右即可。
  • 9.烤好的蛋黄小饼干放窗口吹下风就变得香脆酥松了。
  • 10.美味的蛋黄小饼干就做好了。
