辣炒鸡胗
鸡胗就是鸡的胃,禽类的胃分肌胃和腺胃,腺胃较小分泌胃液,肌胃较大且肉质较厚,负责储存和磨碎食物。胗是指肌胃。鸡胗是帮助鸡进行消化的,鸡没有牙齿,吞食的小石子,就是储存在那里边 。 鸡胗内壁(黄色的一层膜)洗净,晒干,是一种中药,名为鸡内金。生用或炒用,有健胃消食的功效。

辣炒鸡胗,又辣又脆的一道爆炒菜。鸡胗去两头的筋,切花刀或薄片都可以,用郫县豆瓣酱和孜然粉炒,不同的风味,都很好吃。

Steps to make 辣炒鸡胗

  • 1.鸡胗洗净,切去两头的筋
  • 2.纵向切连刀片,底部不要切断
  • 3.再横向切透不切断,拿起是如图的状态
  • 4.全部都处理好
  • 5. 用盐、生抽、料酒、生粉,抓匀腌制片刻
  • 6.尖椒切条,胡萝卜切片,洋葱切丝
  • 7.腌好的鸡胗用七八十度的热水焯至八成熟,捞出沥净水份备用。辨别八成熟的状态,看花刀的缝里都刚刚变成灰白的浅粉色就可以了
  • 8.热锅热油,爆香蒜末,下洋葱和胡萝卜稍炒几下
  • 9.下尖椒和郫县豆瓣辣酱炒匀
  • 10.倒入鸡胗,加盐快速翻炒,出锅即可
