红烧甲鱼
甲鱼有提高免疫力、滋养阴血、补肾壮阳等功效。大病之后,可用甲鱼炖汤来调养。失血性的疾病也可以使用甲鱼来调养。

Steps to make 红烧甲鱼

  • 1.将甲鱼放案板上,肚皮朝上,甲鱼的头就会伸出来,然后……。将甲鱼放入盆中,烧一壶开水,放置3分钟,倒入盆中,把甲鱼烫40秒后捞出,快速撕去甲鱼表面的薄皮,沿裙边下刀,切掉甲鱼盖,去除内脏,剔净黄油,冲洗干净。
  • 2.将甲鱼斩块,用水冲洗干净。
  • 3.将甲鱼冷水下锅,加入葱、姜、料酒,开锅煮2~3分钟。
  • 4.将焯好的甲鱼再次冲洗干净,控干水分备用。
  • 5.炒锅上火,放油烧热,放入蒜粒、葱段,煸出香味,放入甲鱼翻炒,烹入料酒翻炒均匀。加入生抽、蚝油、冰糖、香葱、盐,加开水漫过甲鱼。
  • 6.待炖至肉质软烂,调入少许鸡精,收汁出锅。
  • 7.成品。软糯香浓。
