佛卡恰,有译作佛卡夏的,一款意大利乡村面包,曾被列为新千年的热门食品之 一,佛卡恰其貌不扬淳朴厚实,制作简单又不讲究, 表皮确是酥脆焦香内心柔软,在烘烤的过程中,蒜片、黑胡椒和橄榄油完美结合的迷人香味弥漫整个房间。

Steps to make 佛卡恰

  • 1.将水、白糖、高筋面粉、盐、酵母粉(与盐分开放)放入面包机桶内,用筷子先搅拌成松散状之后倒入10克橄榄油。
  • 2.启动一个和面程序,将面团揉成光滑柔软的面团,然后进行基本发酵,当面团发酵至2—2.5倍大时(60分钟左右)就好了。
  • 3.发酵好的面团取出压扁排气,滚圆松弛10分钟,然后用擀面杖擀成20--25厘米的圆饼状放入烤盘(我是直接就放在烤盘里擀成的),用剪刀在面团上剪一些小口子。
  • 4.刷上橄榄油,(多刷些没关系,在烤的过程中油都会被吸收的)。
  • 5.再剪开的刀口处插上大蒜片。
  • 6.均匀的撒上盐和黑胡椒粉(现磨黑胡椒粉的更香),面饼进行第二次发酵20分钟。
  • 7.放入提前预热的烤箱中层,175度,25—30分钟。
  • 8.烤至表面焦黄即可。
  • 9.切块或切片食用。
