新鲜莲藕营养丰富,含有大量的水分,以及蛋白质、膳食纤维、胡萝卜素等,是秋冬食补养生的佳品。中医认为,生藕味甘性凉,可消淤凉血,清烦热,止呕渴;熟藕味甘性味,有益胃健脾、养血补虚、止泻的功能;藕节则富含有单宁酸,可治疗各种吐血、便血、尿血等各种血症。莲藕真的浑身都是宝啊!但是,莲藕淀粉含量高,生食不宜消化,所以即使凉拌也要将偶焯熟再调味。今天这道莲藕,主要手法是凉拌,专门要吃出新鲜嫩藕的爽脆口感,所以片要切得薄,以缩短焯烫时间;调味不用盐,只用糖醋突出莲藕甘美鲜甜的味道;稍稍加一点儿麻辣滋味,让口感更丰富——那真是爽口脆嫩无可匹敌!

Steps to make 珊瑚藕片

  • 1.辣椒切细丝,姜切末备用;
  • 2.莲藕洗净去皮,顶刀切成薄片;
  • 3.切好的藕片马上放到加入几滴白醋(分量外)的清水中,浸泡5、6分钟;
  • 4.同时起锅,坐水烧开,待水沸腾后下入藕片,略一汆烫;
  • 5.迅速捞出藕片,过凉后放进冰过的凉开水中,冰至凉透;
  • 6.捞出,沥干水分;
  • 7.摆盘;
  • 8.先撒姜丝,再摆上一半的红辣椒丝;
  • 9.糖和米醋加在一起,搅拌均匀;
  • 10.浇在藕片上;
  • 11.小锅置火上,加入麻辣油,投入剩下的红辣椒丝,小火炸至辣椒丝微微变干;
  • 12.趁热将辣油浇在藕片上,用一个大盆扣住,略焖一会儿即可。
