Steps to make 紫薯花卷

  • 1.先把紫薯去皮切块蒸熟
  • 2.紫薯碾压成泥,取250克紫薯泥加250克面粉,加入4克酵母粉
  • 3.和成面团
  • 4.发酵至两倍大小
  • 5.和紫薯面团的同时,把剩余的500克面粉加250克的水及3克的酵母粉和成面团
  • 6.白面团也发酵至2倍左右大小
  • 7.发酵好的面团排气松弛几分钟
  • 8.分别擀成长方形的片,厚度约5毫米
  • 9.两个面片叠加一起
  • 10.卷成约10厘米的卷
  • 11.切成2.5厘米左右的段
  • 12.取两段面团底部对到一起
  • 13.稍微拉长后扭转
  • 14.然后把两头捏在一起
  • 15.花卷胚就做好了,盖上屉布再饧发20分钟左右
  • 16.开水上笼,中偏大的火候蒸35分钟
  • 17.蒸熟的花卷。
