茄子汆拌面
有人说过:吃面的碗要比脸大,这样吃面才算是真正的吃面。这个说法不无道理,也是有据可查可考的。像山西、陕西的老乡就爱用比小盆还要的大面碗来盛面。陕西八大怪里就有一怪:碗盆难分开。

西部的人吃面就是爽气:大碗盛面、浇上辣子,热热乎乎、呼呼啦啦,希里呼噜的一气呵成。吃的是一身大汗,浑身通透,看的是脸红面赤,直咽口水恨不得也马上爽气的来上一碗。

我爱吃面但会的花样不多,百度了些吃法,自己尝试着做来吃。,像不像三分样,今天就做个“茄子汆拌面”,有点饶舌的名字,但味道是真不错。汆的愿意是把食物放在开水里稍微一煮,“茄子汆”这里的“汆”我当作“肉卤”来理解,山东这一般把这种浇面的菜卤叫做“浇头”。

    Steps to make 茄子汆拌面

    • 1.圆茄子洗净后切指头肚大丁。
    • 2.五花肉同样切成肉丁,生姜切成末,小葱切葱花。
    • 3.锅里加油,放入花椒炒香后捞出。
    • 4.放入姜末、葱花炒香。
    • 5.倒入五花肉丁,煸炒出油。
    • 6.倒入茄子丁,翻炒。
    • 7.放入少许精盐,翻炒。
    • 8.两勺白糖翻炒。
    • 9.加入一汤匙面酱,翻炒直至茄子丁变软。
    • 10.干面条上笼屉蒸至变软。
    • 11.另起锅,锅里水开后下入蒸过的面条,煮至熟即可盛碗,撒上蔬菜丝,浇两汤匙茄子汆,拌匀即可。
