小芋儿炖琵琶腿
芋头炖鸡,芋头充分吸收鸡肉的香味,我感觉吃起来芋头比鸡肉还好吃哩。用它做年菜,寓意吉祥如意,是一道好吃又有好兆头的菜。特意买了些小芋头,这些小芋头个头虽小,但味道很好,和那种普通的小芋头不一样 的品种,就是价格也是普通小芋头的两倍还不止,呵呵,用它炖鸡,还是很好吃的,也算是值了。就是今天的片片没有拍好,体现食材的样子没有充分体现出来。惭愧啊。

  • 水发香菇200g
  • 冰糖10g
  • 胡椒粉2g
  • 老抽10g
  • 6g
  • 黄酒50g

Steps to make 小芋儿炖琵琶腿

  • 1.干香菇提前用水泡发,小芋儿洗净,鸡腿洗净
  • 2.把琵琶腿用到刺透,多刺几个口,以便入味
  • 3.凉水入锅焯水去除血沫。
  • 4.小芋头去皮备用,去皮后浸泡的水中谨防氧化变色
  • 5.锅中放少量油,放入鸡腿煎,两面都煎变色
  • 6.倒入黄酒,黄酒的量要大些,一是去腥,而是可以使肉质更嫩
  • 7.加入冰糖,胡椒粉、和老抽及少量的五香粉,翻炒至上色
  • 8.加开水没过鸡腿,
  • 9.放入芋头和香菇
  • 10.大火煮开后转小火炖20--30分钟,汤汁收到1/3时,放入盐继续小火炖5分钟左右以入味。
  • 11.最后放入青椒片,翻炒均匀即出锅。
