香辣虾

Steps to make 香辣虾

  • 1.新鲜虾一斤,先用牙签从虾的第二节处挑出虾线。
  • 2.挑出虾线后,用剪刀✂️把虾头尖刺和虾须剪掉,这样吃的时候不怕扎到嘴。
  • 3.虾清洗一下沥干水份,放入大碗中,加入一点盐、料酒、胡椒粉、生抽、一些辣椒圈和姜丝,腌制15分钟。
  • 4.调味料:姜切丝、干辣椒切小段、蒜头和青线椒切小粒、花椒粒一小把。
  • 5.起锅,热锅凉油,中火,把所有调味食材倒进去,煸炒一下,喜欢吃辣一点的可以多加几个小米辣。
  • 6.调味食材煸炒一分钟后出香味,倒入虾,注意一下,腌制虾的时候有不少酱水,倒入锅之前要用漏勺捞出虾沥一下水份,这样煸炒虾才不会太软。
  • 7.大火,用煎的方式,让每一个虾都平铺在锅中 ,煎香虾壳。
  • 8.一面煎好了翻另一面继续煎。
  • 9.煎到虾壳酥香,加一点点生抽、一小勺糖、胡椒粉继续翻炒一分钟,最后加入一点辣椒粉。
  • 10.看,表皮酥香,每只虾都粘了一点辣椒粉,这样吃起来有干锅虾的口感。
  • 11.关火了,装盘。
  • 12.虾非常入味,虾壳酥脆,下饭下酒都非常不错的。
