肉末苦瓜
我喜欢把苦瓜叫做“夏天里的灭火器”,季吃点清爽的小凉伴菜是不错的选择,特别是在鱼肉以后,吃点消暑降噪的小菜就会别有一番惬意在心里面。

用瘦猪肉末来炒制苦瓜条,苦瓜条裹上了肉的浓厚香味,肉末既有豆瓣酱的醇厚味道,又有了苦瓜的清香,味道丰厚且相得益彰,最后的汤汁和肉末酱用来拌面也是很好的选择,因为我就是这么干的。

    Steps to make 肉末苦瓜

    • 1.苦瓜洗净,去瓤后切成细条。
    • 2.放少许精盐把苦瓜条腌渍10分钟杀水,并可去除部分苦味。
    • 3.红辣椒洗净切细条。
    • 4.瘦猪肉切成肉末。
    • 5.锅里坐油,油热后放入姜末、豆豉、红油豆瓣酱炒香。
    • 6.倒入切好的肉末,翻炒至熟。
    • 7.倒入1/2汤匙味极鲜酱油,炒匀。
    • 8.倒入苦瓜条、红辣椒条,翻炒至熟即可出锅。
