Steps to make 菠萝炒牛肉

  • 1.菠萝切块,再用盐水泡过,菜椒切成块;
  • 2.牛肉逆纹均匀地切成薄片,放在大碗里,先放生抽2茶匙、老抽1/4茶匙、糖1/2茶匙、料酒1茶匙、嫩肉粉(或Baking Soda)1/4茶匙和胡椒面1/4茶匙,用手抓至有粘性,加1汤匙匙水,再用手抓至肉吸收水份,再加1汤匙水,再抓至水能完全起入肉里,切忌一次过倒入水,此时看,如果肉还是比较干,就加1茶匙水淀粉,如果比较湿了,加1/4茶匙玉米淀粉,抓匀,然后加1/2茶匙沙拉油来,抓几下,可封住水分,牛肉放置约30分钟,这样肉有时间吸收我们刚才放的调料;
  • 3.油温三至四成热滑炒牛肉片;
  • 4.重新起锅,放少许姜丝和蒜头,爆香后下菜椒,稍翻炒,点入精盐,兜至七八成熟,倒入菠萝;
  • 5.稍兜几下,倒入滑炒过的牛肉,攒料酒1茶匙,撒少许胡椒粉,兜均匀,撒几滴麻油作为明油,翻炒几下可上碟。
