经典川菜 鱼香肉丝

Steps to make 经典川菜 鱼香肉丝

  • 1.里脊肉切丝
  • 2.冬笋木耳青红椒切丝备用(正宗的鱼香肉丝配料里面是没有青椒丝的,只有冬笋木耳)加点青红椒好看也好吃
  • 3.肉丝里加点盐,料酒,胡椒粉抓一会,然后加点淀粉抓两下静止15分钟腌一会
  • 4.锅中做底油,烧至四五成热时,下入肉丝滑炒,划至肉丝变白就可以了
  • 5.划好盛出备用
  • 6.调鱼香碗汁,蒜葱姜切末蒜葱姜的比例是1:2:3这样鱼香味最浓,加入盐一点点加入生抽2勺,糖3勺,米醋3勺,料酒两勺,鸡粉1勺,生粉1勺水适量
  • 7.锅中做底油,放入半勺豆瓣酱1勺泡椒小火煸一会儿在加入一点料酒慢慢煸炒,煸出红油,这样才能彻底激出辣酱香味
  • 8.辣酱炒出红油后,放入肉丝、笋丝青红椒丝和鱼香汁面的蒜姜葱沫(用手从碗中扒出来)炒香,最后淋入鱼香碗汁,汁收浓后即可出锅
