糖醋里脊
糖醋里脊是经典汉族名菜之一。用番茄酱代替传统的糖醋汁其色泽更加红亮,口味更加酸甜可口,而且最吸引人的就是它外焦脆、里软嫩的口感。第一口咬上去,浓厚蜜意的酸甜汁包裹在外衣上、酥脆焦香,等吃到里面,才发现嫩香的里脊早已悄悄地藏在唇齿之间,味道和口感贴合得天衣无缝,搭得瓷实。

  • 玉米淀粉2勺
  • 1勺
  • 白胡椒粉少许
  • 番茄酱4勺
  • 陈醋1勺
  • 白芝麻1勺
  • 葱花1勺
  • 姜末1勺

Steps to make 糖醋里脊

  • 1.里脊肉准备好
  • 2.切成细条
  • 3.放进盆子里倒入1勺料酒,1小勺盐2勺玉米淀粉,大约三分之一的蛋清,一点白胡椒粉
  • 4.用手抓匀腌制15分钟
  • 5.番茄酱加醋调匀
  • 6.加上适量的水调匀,这个番茄糖醋汁只要口感适合自己就行,没啥严格的比例
  • 7.炒锅倒入适量油烧热放入腌好的里脊肉条中火炸熟
  • 8.家里的锅比较小,到的油不是很多,可以分成2-3次把里脊肉炸熟
  • 9.炸好一遍控油
  • 10.再次把油温烧至冒烟
  • 11.里脊肉条回锅大火再复炸一分钟捞出,这样吃起来外酥里嫩
  • 12.另起锅,热锅凉油放点葱花,姜末
  • 13.小火炸出香味
  • 14.倒入调好的糖醋汁
  • 15.烧至冒泡
  • 16.倒入炸好的里脊肉条翻炒
  • 17.汤汁收浓即可出锅
  • 18.最后撒点白芝麻装饰一下
