  • 细砂糖20克
  • 玉米油20克
  • 南瓜泥30克
  • 紫薯泥30克

Steps to make 蒸月饼

  • 1.准备好主材料。
  • 2.取出40克糯米粉、60克小麦淀粉装盆里,加入30克紫薯泥和10克玉米油、10克细砂糖揉碎。
  • 3.加入适量的滚烫水用筷子混合成粒状。
  • 4.等稍微凉一点用手揉成光滑面团盖紧。
  • 5.将剩余的糯米粉和小麦淀粉加入30克南瓜泥,油,糖混合。
  • 6.用同样的方式揉成光滑南瓜面团。
  • 7.取出30克面团搓圆压扁,并包入35克馅料蜜红豆捏紧收口。
  • 8.包好馅后粘点干粉,放入63克的模具里。
  • 9.用手按压出花纹。
  • 10.扣出。
  • 11.紫薯面团同样操作包馅捏紧入模具。
  • 12.扣出。
  • 13.将整形好的月饼胚排入蒸笼里。底部要抹油防粘。
  • 14.上锅入适量水烧开,将月饼胚放入蒸锅里盖紧。用大火隔水蒸15分钟即可关火。
