【湘菜】剁椒蒸臭豆腐(含臭豆腐的做法)
许多年没有吃过臭豆腐了,很想念湖南黑灰的炸臭豆腐,抹点咸菜,以前在深圳工作的时候,虽然被告之不卫生,可还是忍不住见到就买^_^.  还有香港的黄色的臭豆腐,十年前卖6元一块,不知道现在是什么价格了。

臭豆腐好久没吃过了,特别想念,一年一度的亚洲美食节上倒是有卖的,号称是台湾正宗,吃了却说不出与港市的有什么不同。可惜一年才能吃到一次,不然解解馋又管它是哪里出的呢?

有天上网逛,发现有个老爹用王王致和臭豆腐乳加黄酒做出来的炸臭豆腐,哈哈,原材料我可都有,那还等什么,做来解馋啦!!

Details of ingredients

  • 王致和臭豆腐乳6小块
  • 豆腐干2块
  • 姜末50g
  • 花椒50g
  • 清水500ml
  • 湖南剁椒3大勺
  • 葱末30g
  • 绍兴黄酒150ml
  • 10g

Steps to make 【湘菜】剁椒蒸臭豆腐(含臭豆腐的做法)

  • 1.老豆腐切成厚约3分分的块
  • 2.找个大的容器,放入切好的姜末
  • 3.倒入绍兴米酒(老爹说应该用黄酒,可惜我只买得到米酒!)
  • 4.放入50g的花椒
  • 5.再加入6块王致和臭豆腐乳,搅碎并倒入臭豆腐乳汁
  • 6.把切好的豆腐块浸入汤汁中
  • 7.盖上密封盖,放入冰箱,浸泡24小时以上~ 我是48小时以后才开的封,那个臭,我是没敢在人都在家的时候弄~_~
  • 8.将腌制好的臭豆腐摆盘,上面均匀地铺上3大勺红翻天剁辣椒。
  • 9.锅内烧水沸腾后,放入臭豆腐,隔水用大火蒸7分钟之后起锅,散上葱花 糖,吃得不让人停嘴!!
