Steps to make 一根面

  • 1.面粉加一个鸡蛋、2克盐。
  • 2.加60克水(根据鸡蛋的大小调整水的用量),搅拌均匀。
  • 3.和成光滑的面团。
  • 4.盖上,室温松弛半个小时。
  • 5.取出面团,搓成细长条,依次盘入盘子里,全部刷满油(油稍微多点),密封松弛2个小时以上,我这个是放入冰箱冷藏了一个晚上。
  • 6.第二天早上,起锅烧油,煎一个荷包蛋。
  • 7.加适量的水、香菇切薄片、瘦肉丝,大火烧开。
  • 8.面条提前半个小时拿出来,室温松弛30分钟后,用手轻轻拉入锅中(粗细拉到自己喜欢的程度即可)。
  • 9.油浸的面条延展度相当好了,轻轻拉细就好。
  • 10.再次大火煮开。
  • 11.加盐、鸡精调味。
  • 12.最后放入葱花。
  • 13.好了。
