绿豆糕
绿豆糕要想口感细腻些,最好选择脱皮绿豆,很多年前我也选择过带皮的绿豆,浸泡透以后用手去搓绿豆皮,这个过程差点没把自己给做废,当然也可以选择不去皮,直接用带皮的绿豆,那样做出来的口感稍微粗糙一些,我现在会买脱皮绿豆来做,这样做出来的质地会更细腻些。

Steps to make 绿豆糕

  • 1.脱皮绿豆提前浸泡上,我泡了八个小时,已经充分泡涨了。
  • 2.泡好的绿豆上锅蒸,隔水蒸30分钟,直到绿豆完全蒸熟,用手轻轻一捻就能捻成粉末状即可。
  • 3.蒸好的绿豆取出来,加入黄油,蜂蜜,白砂糖拌匀,拌的时候,我会用到硅胶刮刀,一边拌一边用力按压,这样拌匀以后绿豆也压的比较烂了。
  • 4.然后把搅拌好的绿豆放到绞肉机里,大力度搅拌细腻即可,有破壁机的朋友,可以用破壁机搅,做出来的更细腻,我嫌破壁机洗起来麻烦,就用了绞肉机,不过我的绞肉机搅的也很细腻。
  • 5.搅好的绿豆沙放凉后就可以压出形状了,也可以盖上保鲜膜,放冰箱冷藏一下再用。
  • 6.将放凉的绿豆沙搓成一个个均匀的小球状。
  • 7.放入月饼模具中,或者专用的绿豆糕模具都可以。
  • 8.将绿豆糕用模具里压出来就可以了,密封以后放入冰箱冷藏保存,随吃随取。
