白菜香菇烧肉丸
白菜的做法很多。但我家大宝钟爱这款烧肉丸。以前我是把丸子炸好后与白菜同烧的。现在快到露肉的季节了,因此我也要进入减肥季。今天改炸肉丸为煮肉丸,减少油脂摄入,味道也很不错!

  • 香菇5朵
  • 十三香1勺
  • 蚝油1勺

Steps to make 白菜香菇烧肉丸

  • 1.洗净白菜,将大片改刀。我今天用的是娃娃菜。猪肉末100g,香菇5朵去蒂洗净。
  • 2.姜、蒜切片,蒜的量要比姜多1-2倍。八角少许,十三香少许,虾皮洗净后水泡上。
  • 3.肉末加入少许盐、生抽、料酒、姜粉、淀粉和1个蛋清,分次加入少量水顺一个方向搅打上劲。
  • 4.锅中倒入适量水,烧开后下入丸子煮至丸子浮起。去浮末,捞出丸子再盛出适量汤备用。
  • 5.剩下的水把香菇焯一下捞出备用。
  • 6.锅中倒入少许油,爆香姜蒜和八角。
  • 7.下白菜翻炒至出水。
  • 8.倒入肉丸和汤,汤不要加多了,到菜品的三分之二处就可以了。还有香菇。加入1勺蚝油,加盖焖煮3-5分钟。我用的娃娃菜比白菜嫩,焖3分钟就可以了。
  • 9.最后加适量盐、少许生抽拌匀即可。
  • 10.可以洒些枸杞装饰。
