8寸戚风蛋糕

  • 牛奶35克
  • 白糖70克
  • 白醋2ml
  • 鸡蛋4个

Steps to make 8寸戚风蛋糕

  • 1.将蛋黄、蛋清分离分别装在两个无油无水的盆中
  • 2.将15克白糖加到蛋黄中,搅拌均匀
  • 3.加入35克玉米油,搅拌均匀(很多配方都写着分三次加入油,我觉着一次和三次没什么区别,搅匀了就行)
  • 4.加入35克牛奶搅拌均匀
  • 5.筛入低粉和玉米淀粉
  • 6.按不规则方向搅拌均匀,拌倒不能有干面粉哦,拌好后放倒一边备用
  • 7.蛋清中加入几滴白醋,用打蛋器打出大泡,加入20克糖继续打发
  • 8.打到成细腻的肥皂泡时,在加入20克糖,继续打发
  • 9.打到湿性发泡,在加入剩下的15克糖继续打发
  • 10.打到蛋清可以拉出小三角,基本上就打发好了
  • 11.取三分之一的蛋白到蛋黄糊中,翻拌均匀(注意不要画圈搅拌,以免消泡)
  • 12.将拌好的蛋糊倒入剩余的蛋白中,翻拌均匀
  • 13.将拌好的蛋糊倒入模具中,用力震一下,把大气泡震破
  • 14.放入预热好的烤箱,上下火,中下层,130度烤40分钟,转155度再烤20分钟
  • 15.出炉后用力震一下
  • 16.马上倒扣到考网上,自然冷却后脱模
  • 17.脱模了,还不错吧
  • 18.造个型
