夏天的生猛凉菜——{老虎菜}
这道是一东北朋友介绍的,算是他们那夏天饭桌上的常客,操作简单,用到的食材也都是当季的新鲜食材,食来味道香辣,清爽利口,菜如其名——老虎菜,口味真是犀利、生猛哇~ 哈哈

她还给我讲了关于这道菜的有趣典故:“传说在东北有一个儿媳妇不太会做家务事,对做菜更是一窍不通。一天家中的婆婆让儿媳妇做一道拿手菜,儿媳妇犯了难,不知从何下手,但还是逞强的将辣椒、黄瓜、大葱、香菜等原料洗净切丝。胡乱的扔在一起用调料凉拌。当这盘“自创”的菜端上桌子,婆婆看见如此离谱的做法,尝了一口不禁感叹的说道:“媳妇,你可真虎啊。”(虎:在东北方言中除了指老虎之外,还意指此人傻、缺心眼。)于是,此后人们就将这道菜称之为“老虎菜”。

    Steps to make 夏天的生猛凉菜——{老虎菜}

    • 1.所有食材洗净、沥干水分。 香菜是感光食物,大太阳的日子可以像我一样换成嫩芹菜哈~
    • 2.嫩芹菜或者香菜切段,用开水烫一下、再过凉备用
    • 3.薄皮红尖辣椒去籽切丝,不必去白茎
    • 4.大葱切丝
    • 5.将以上材料混合,放盐腌制一会
    • 6.滴一些柠檬汁,即可以增加风味,还可保证食材得色泽
    • 7.在腌制的同时来做酱汁。紫皮洋葱半个切末
    • 8.薄盐酱油或鲜贝露、盐、味精、柠檬汁、洋葱末、麻油用少量开水调匀
    • 9.黄瓜是容易出水的菜,所以留在最后处理,而且因为其清爽的口感,所以不必用盐腌制。黄瓜去皮切丝
    • 10.将所有食材混合,浇淋上料汁拌匀就可以咯。
